  1. I saw her being stole from the parking lot.
  2. I saw her car being stolen from the parking lot.

Number 2 is in fact correct and number 1 is not. The reason for this is that as the person that is saying the sentence saw the car being stolen by somebody else. Here, the person is using the passive voice.
Here’s another example:

  1. He stole a book from the library.
  2. A book was stolen from the library.

In these examples, number 1 is using the active voice, he is doing the stealing. Number 2 on the other hand is using the passive voice, the book is being stolen.
So, the answer to the original question is because you are using the passive voice, you need to use stolen (passive) and not stole (active).
