Is it different to say optimal thinking or optimum thinking ?

The adjectives optimal and optimum both mean ‘the best possible’. There’s no difference between the meaning of the two words, however, ‘optimal’ is considered slightly more formal. It is also more common in British English than in American English.
So, to answer your question: no, optimal thinking and optimum thinking are not different.
