Everyone refers to all the people in the group.

  • The new policy affects everyone in this country.

Every one refers to each individual in the group.

  • I would like to thank every one of you to come to my performance today.

There isn’t big difference between these two. It depends on what you what to emphasize(each person or whole group).

All good way to remember is that you can replace everyone with everybody. On the other hand, you can use each one instead of every one.
